On the BBQ Trail
I like BBQ!! Ask anyone that knows me and they will tell you the same thing. I've been grilling meat on a grill for many years and have been satisfied. I started talking to a guy at a charity function and he told me about a class he was considering about smoking meat. Ok, that got my attention. Got the number and called the next day. The next class that was being held was going to be in June in Columbia, SC. Got the little women to let me go (yes, she holds the purse strings) for my Father's Day present. Got there about 3:30pm on Friday and they already had the cookers setup. Didn't know it at the time but there was about 20k worth of cookers that the guys brought to the class. After some introductions we got started. We were going to cook a whole hog, pork butts and ribs. It was going to have the feel of a real bbq competition with judging on Saturday morning. Wow!! Did I learn somethings. Learned about injecting, rubs, finishing sauces, and table sauces, how long to cook, what to look for....just really an outstanding class.
